NUTRITIOUS  TANDOORI ROTI

*Preparation time:20 minutes             *Cooking time:15 minutes        *Makes 8 rotis

 INGREDIENTS

1 cup whole wheat flour(gehun ka atta)

¼ cup soya flour

1 teaspoon fresh yeast,crumbled

1 teaspoon sugar

¼ teaspoon finely chopped fenugreek leaves

1 teaspoon finely chopped garlic

½ teaspoon salt

1 teaspoon oil

 

Other ingredients

Whole-wheat flour(gehun ka atta)

For rolling

1 tsp oil for greasing

PROCEDURE

1.Combine all the ingredients accept the oil in a bowl and knead into a soft dough using enough water until it is smooth and elastic.

2. add the oil and kna\ead again

3. Cover the dough with a wet muslin cloth  and allow it to prove till it doubles in volume(approx 15 to 20 minutes)

4. Press the dough lightly to remove the air.

5. Divide the dough into 6 equal portion.

6.Roll out each portion into a circle of 125mm.(5”) diameter using little flour.

7. Remove the lid of the pressure cooker and grease the inside of the bottom part very lightly with oil.

8. Heat it upside down over an open flame.

9. Apply a little water on one side of each tandoori roti and stick the wet side around the inside of the heated bottom part of the pressure cooker.

10. Again turn the bottom of the pressure cooker upside down and cook till brown spots appear on the surface of the tandoori roti and they peel away easily.

11.You can stick 3 to 4 tandoori rotis at a time on the inside of the pressure cooker.Serve hot.

JOWAR MOOLI MUTHIAS

 

*Preparation time:10 minutes    *Cooking time:15 minutes       *Serve 2

 

Ingrediets

 

1 cup grated radish(with the stems and leaves),finely chopped

½ cup jowar flour(white millet flour)

½ cup Bengal gram flour(besan)

2 tbsp curds(dahi)

1 tsp chopped coriander

juice of ½ lemon

1 tsp green chilli ginger paste

2 large cloves garlic ,grated

½ tsp turmeric poiwder(haldi)

1 tsp sugar (optional)

1 tsp oil

salt to taste

 

For the tempering

1 tsp cumin seeds (jeera)

1 tsp sesame seeds (til)

¼ tsp asafetida(hing)

1 ½ tsp oil

 

For the garnish

2 tsp chopped coriander

 

Other ingredients

Oil for greasing

 

PROCEDURE

Combine all the ingredients in a bowl and knead to make a soft dough  adding little water if required.

Divide into 3 equal parts and roll each portion into a cylindrical shape approximately 125 mm. (1”) thick slices.

Place on a greased steaming dish and steam for 10 to 12 minutes till firm.

Remove cool and cut into 25 mm.(1”) thick slices.

 

HOW TO PROCEED

 

  1. Heat the oil in a pan and add the cumin seeds. When they crackle add the sesame seeds and asafetida.
  2. Add the sliced muthias and sauté over a low flame till they are lightly browned .Serve hot garnished with coriander.
